Vegan Thai Peanut Ramen

 

This creamy red curry peanut ramen is the perfect balance of bold flavor, plant-based protein, and easy weeknight magic.

The base is simple but powerful: red curry paste, coconut milk, and peanut butter. The curry gives it warmth and spice, while the peanut butter adds creaminess and depth. If you what to whisk the peanut butter with a bit of broth before adding it to the pot , that would help incorporate it smoothly — but it’s not required.

A splash of lime juice keeps the broth bright and balanced, while soy sauce and maple syrup round it out with savory-sweet umami. You can toss in your favorite toppings: mushrooms, red bell pepper, scallions, tofu, etc.

Cook the noodles right in the broth for less mess and more flavor. It’s one of those meals that tastes like it took way longer than it actually did. And it feels like a hug in a bowl.

Vegan Thai Peanut Ramen

Ingredients

  • 1 tbsp olive oil
  • 2 tbsp minced ginger
  • 5-6 cloves garlic, minced
  • 2 tbsp red curry paste
  • 1 can full-fat coconut milk
  • 48 oz vegetable broth
  • 1/2 cup peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • freshly squeezed lime juice, approx 2 limes
  • 12 oz ramen noodles
Optional Toppings
  • Sauteed Mushrooms
  • Red Bell Pepper
  • Scallions
  • Sesame Seeds

Instructions

  1. Heat olive oil in a big pot over medium-high. Add garlic and minced ginger. Cook for 1-2 minutes until fragrant. Stir in red curry paste and cook for another minute.
  2. Pour in coconut milk and vegetable broth. Lower heat to a simmer.
  3. Whisk in peanut butter. Add soy sauce, maple syrup, and lime juice. Simmer on low for 10 minutes. Taste and adjust with soy sauce, more lime, or maple syrup if needed.
  4. A few minutes before serving, add ramen noodles and cook until soft (usually 4 minutes).
  5. Serve with optional toppings like sauteed mushrooms, red bell pepper, scallions, and sesame seeds.
