This is the meal I make when I need something cheap, cozy, and no-fuss — but still want it to taste like I care. It’s tofu, broccoli, rice, and teriyaki sauce. That’s it. And somehow, it still hits every time.
A quick tip if you’ve struggled with sad, soggy tofu in the past: toss it in a little cornstarch before it hits the pan. It creates the crispiest golden edges without deep frying or drama. Just press the tofu, cube it up, coat lightly with cornstarch, and into the skillet it goes.
Broccoli doesn’t need much here. A quick roast or pan-fry until it gets those caramelized bits brings out its natural sweetness and makes the whole bowl feel more balanced. And if you’re not making rice in bulk to keep in the fridge, start now. It makes this kind of throw-together dinner even faster.

Teriyaki Tofu & Broccoli

Ingredients
- olive oil
- 1 block extra-firm tofu
- salt + pepper
- 1 head of broccoli
- rice
- teriyaki sauce
Instructions
- Pour olive oil in a skillet over medium-high heat.
- Chop up your tofu into cubes and toss it on the skillet once it's hot. (Optional tofu prep: Coat with corn starch prior to skillet.) Season with salt and pepper.
- Chop up your broccoli with longer stems and toss it in the skillet.
- Cook your rice separately and set aside.
- Add teriyaki sauce the last 2 minutes of pan-frying the tofu. Toss the broccoli and tofu together and plate with the rice.
