Southwest Breakfast Burrito
When it comes to starting the day right, I’m all about meals that strike the perfect balance between nourishing and effortless. This tofu breakfast burrito does exactly that — it’s protein-packed, flavor-forward, and comes together in under 15 minutes.
The base is a simple tofu scramble: crumbled, pan-fried tofu seasoned to your taste (I love a mix of garlic powder, turmeric, smoked paprika, salt, and pepper). Adding fresh spinach toward the end gives it a vibrant boost and just the right touch of greens.
From there, the build is easy — a soft tortilla, creamy avocado slices, hearty black beans, the savory tofu-spinach scramble, and your favorite salsa. The combination delivers healthy fats, plant-based protein, fiber, and a touch of heat in every bite.
This burrito is endlessly customizable. Add sautéed peppers, roasted sweet potatoes, or even a dollop of vegan sour cream if you’re feeling indulgent. And if you want to level it up even more? Toast it in a hot skillet after wrapping for a perfectly crisp outer layer.
Whether you’re prepping breakfast for the week or just need something satisfying to get you out the door, this wrap delivers. Simple ingredients, bold flavors, and no compromise on nutrition.
