Sundried Tomato Butter Beans

Ingredients

Beans
  • 1 tbsp olive oil
  • 1/2 large onion, chopped
  • 1 can butter beans
  • (optional) oil from sundried tomato jar
  • to dip or to top: sourdough bread, naan, tortillas, pasta, or rice
Sauce
  • 1/2 block firm tofu
  • 4 garlic cloves
  • handful of sundried tomatoes (approx 8)
  • drizzle of oil from sundried tomato jar
  • salt + pepper

Instructions

  1. Heat oil over medium-high heat.
  2. Add onions and cook until fragrant. Add beans and reduce heat to simmer.
  3. Meanwhile, add sauce ingredients to a high-speed blender until smooth and creamy. Add water until desired consistency is achieved. Add sauce to beans and simmer for 5-10 minutes. Stir frequently careful not to burn.
  4. Eat as is or dip with bread or serve over pasta or rice!
