Ingredients

  • 1-2 bagels
Mushrooms
  • 1 tsp olive oil
  • 1/4 small red or white onion, thinly sliced
  • A handful of oyster mushrooms, shredded or pulled (can sub breakfast sausage)
  • Optional: 2 tsp vegan Worcestershire sauce, a splash of liquid smoke, salt + pepper to taste
JUST Egg Scramble
  • 1/2 cup JUST Egg
  • 1 tsp olive oil (for scramble)
  • Pinch smoked paprika
  • Pinch garlic powder
  • Pinch onion powder
  • Optional (highly recommended): Large pinch kala namak (black salt)
  • Salt + pepper, to taste
Toppings
  • 1/4 avocado, sliced
  • A handful of alfalfa sprouts
  • Chipotle aioli (optional)

Instructions

  1. Heat 1 tsp olive oil in a pan. Add sliced onion and cook for 2 minutes.
  2. Add mushrooms, Worcestershire, liquid smoke, salt + pepper. Cook until soft and browned.
  3. In a small bowl, whisk JUST Egg with paprika, garlic powder, onion powder, kala namak, salt + pepper.
  4. In a new pan, heat another 1 tsp olive oil. Pour in the egg mix and cook on low-medium heat, stirring often, until scrambled and set.
  5. Toast your bagel.
  6. Layer with chipotle aioli, mushroom-onion mix, vegan scramble, avocado, and sprouts.
