10-Minute Cold Vegan Asian Noodle Salad

This cold Asian noodle salad only takes 10 minutes to put together but it’s PACKED with flavor, highlighting fresh veggies like spinach, bell pepper, carrots, cabbage, scallions, and fresh herbs. Yum!

 
 

What noodles can you eat cold?

I’ve found that basically all noodles are fine to eat cold, provided that they’ve been kept at the correct temperature in the fridge if they’re leftovers. You can get a specific Asian noodle, like a ramen, pad thai, brown rice, etc. or you can go with normal wheat pasta.

How do you cool noodles?

If you’re making the noodles fresh, you’ll want to make sure you cool the noodles before serving otherwise you’ll get an uncomfortably warm spinach with a cold dressing and the combination just will not be great. Cool your noodles by cooking, draining, and then pouring cold water over the noodles immediately so that there is no more steam coming from them. This will also prevent the noodles from sticking.

How do you peel fresh ginger?

I highly recommend using a spoon to peel the ginger. It will help you not waste any of the good stuff and just take off the skin.

Ingredients

Salad
  • desired amount of cold noodles (gluten-free or wheat)
  • a large handful of spinach, chopped
  • 1/4 red bell pepper, sliced
  • 1 carrot, julienned or cut using a peeler
  • 1/4-1/2 cup sliced red cabbage
  • 1 scallion
  • fresh herbs (i.e. cilantro, basil, mint, or a combination)
Sesame Ginger Dressing
  • 1/4 cup + 2 tbsp soy sauce
  • 3 tbsp apple cider or rice wine vinegar
  • 2 tbsp sesame oil
  • 2 tbsp maple syrup
  • 2 tsp chili garlic sauce
  • 3 cloves garlic, minced
  • 1" knob ginger, minced

Instructions

  1. Prepare noodles according to package instructions. Drain and pour cold water over them to cool them down and stop from cooking. Set aside.
  2. Prepare spinach, bell pepper, carrots, cabbage, scallions, and herbs. Toss all ingredients together and place in a salad bowl.
  3. Prepare the dressing by whisking all ingredients together in a small bowl. Pour desired amount over salad and store the rest in an airtight container in the refrigerator. Enjoy!
